These chocolate frosted baked donuts are a tasty treat for any chocolate lover and they're easy to eat on the go! The smooth chocolate frosting is made right in the microwave and only requires 2 ingredients! You can even make these doughnuts the night before and have breakfast ready in the morning!

Instructions
Preheat your oven to 425°F (218°C) and lightly grease your donut pans or mini-donut pans.
Cream together the softened butter, cooking oil, sugar, and brown sugar in a medium mixing bowl. Then mix in the beaten eggs, baking powder, vanilla, and salt just until combined.
Alternate between pouring small amounts of all-purpose flour and milk into the wet ingredients until it has all been added. Mix until evenly distributed, but be careful not to overmix.
Transfer the batter (*see note) into the greased donut pan(s). Each donut mold should be roughly ⅔ full so they have room to rise.
Place your donuts on the middle of the center rack in your oven and bake for 8-10 minutes, or until they have risen and the edges become light golden-brown.
Pull your donut pan from the oven and let the donuts sit for 5 minutes in the pan before you transfer them to a wire cooling rack to cool completely.
Frost The Donuts
Once the donuts have cooled, combine the semi-sweet chocolate chip morsels and coconut oil in a microwave-safe bowl.
Melt in the microwave in 15-30 second increments at medium or high power, stirring between each heating until smooth. *Medium power is best to prevent burning your chocolate.
Dip each doughnut, top side facing downward, into the chocolate frosting, then return them to the cooling rack to set.
Notes
After the wet and dry ingredients have been combined, mix gently just until everything is well-distributed. If you overmix the batter, your donuts will be tough!
Rather than pouring the batter, it is much easier to spoon it into the donut pan. Alternatively, you may use a piping bag or plastic storage bag with the corner snipped off to pipe it into the molds.
It is easy to dry out baked donuts. Use a toothpick inserted into the thickest part of the donut to test its doneness. Ideally, a few moist crumbs will be stuck to the toothpick.
The chocolate icing can be reheated as needed to make the icing smooth enough to finish icing the remaining donuts.
To store: Store your baked donuts in a Ziploc bag or an airtight container for up to 48 hours.
To freeze: The donuts can be frozen for up to 6 months (without frosting) by placing them in a heavy-duty freezer bag with the air removed. Thaw in the microwave on 50% power and frost as directed.
