Instructions
Blueberry Baked Donuts
To get started, preheat your oven to 425°F (220°C) and lightly grease your donut pans (or mini-donut pans).
Next, add room temperature softened butter, oil, sugar, and light brown sugar into a mixing bowl. Using a mixer, cream them together, and then add the beaten eggs, baking powder, vanilla extract, salt, and optional ground nutmeg. Mix until everything is well combined.
Next, you'll want to add your flour and buttermilk by alternating between them and gradually adding small amounts. You want the batter thoroughly combined, but do not over-mix it once it comes together.
Gently fold your blueberries into the batter and then pour it into your prepared donut pans, filling each donut cavity approximately ⅔ full.
Transfer the pans to the center rack of your oven and bake for 8-10 minutes. You'll know they are done when you can see some lightly browned edges.
Once finished, remove the baked donuts from your oven and let them cool for 5 minutes before removing them from the pan to finish cooling on a wire rack.
Easy Vanilla Icing
First, in a mixing bowl, combine your confectioner's sugar with milk (or lemon juice), vanilla extract (omit if using lemon juice), and a pinch of salt. Use a spoon to mix, adjusting the consistency (add more milk to make it thinner) until you have a nice free drizzle that clings well to your spoon.
Finally, dip your donuts, top side down, into your icing and lift away. Allow the icing to run off the donuts, then turn and place back on a wire baking rack to set. *Make sure to set a sheet of parchment paper under your rack to catch the dripping icing.
Notes
Only mix your ingredients until they are just incorporated, do not overmix! If you overmix the batter, you can have tough donuts.
You can either spoon the donut batter into your pans or use a piping bag or plastic storage bag (and snip the corner).
Baked donuts can dry out easily. If you stick a toothpick into the thickest part of the donut, you want to see a few moist crumbs stuck to the outside when you pull it out.
Lemon Juice can be used for your icing, just swap it out for the milk. To add an extra touch, top them with fresh lemon zest.
To store: Keep your baked donuts in an airtight container at room temperature for up to 48 hours.
To freeze: They can be frozen once they are completely cooled by placing them in a heavy-duty freezer bag and squeezing the air out (this is best before filling or icing them). Enjoy within 6 months and thaw in the microwave on 50% power.
