Instructions
Preheat your oven to 350 degrees F (175 degrees C) and line your baking sheet with parchment paper.
In a medium mixing bowl, or the bowl of your stand mixer, combine all of the ingredients except for the chocolate chips: almond flour, coconut oil, maple syrup, almond and vanilla extracts (or use 1 teaspoon either almond or vanilla extract), baking soda, baking powder, and salt.
Add chocolate chips and stir to combine until the chocolate chips are evenly distributed. Drop the cookie dough in heaping teaspoonfuls onto the parchment paper lined baking sheet about 2 inches apart.
Bake at 350 degrees F (175 degrees C) for 10-12 minutes, or until nicely browned around the edges. Remove from the oven and allow to cool completely on the baking sheet as cookies will be crumbly while warm.
*Standard sized cookies yield a dozen per recipe at about 220 calories a piece, at 15 cookies per recipe the calorie count is roughly 175 per cookie.
