Instructions
In a large bowl, add ½ cup of the warm water, yeast and 1 tablespoon of the sugar. Allow yeast to dissolve for 5 minutes.
Add the remaining warm water and sugar, the oil, salt and 4 cups of the flour. Combine until smooth and then add enough of the remaining flour to form a soft ball of dough.
Turn out onto a well floured work surface, then knead until smooth and elastic (usually about 7 minutes). *If you're kneading the dough with your stand mixer, knead for 6 minutes.
Place into a greased bowl, rolling through the oil to coat the top of the dough as well. Cover with plastic wrap or a damp towel and let rise in a warm place until doubled (about an hour).
Punch down the dough and turn out onto a lightly floured work surface. Divide into 16 portions and shape each into a ball. Place on greased baking sheets in rows 2 inches apart, cover and allow to double in size again (about 30 minutes).
Beat egg white and cold water, then brush onto the rolls. Sprinkle with sesame seeds (optional, use poppy seeds if desired). Bake in preheated oven at 400 degrees F (205 degrees C) for 15-20 minutes, rolls should be golden brown. Remove immediately to wire racks to cool.

*The usual kaiser roll appearance is shaped, or made using a kaiser roll stamp. If you are shaping your kaiser rolls, turn them upside down when rising (after shaping). If you are using a kaiser roll stamp, be sure to press firmly into your divided dough rounds, but without pushing all of the way through the dough.**A New York Kaiser Roll is usually topped with caraway seeds, another wonderful topping on these sandwich rolls!!
Storing and Freezing Kaiser Rolls
Store any unused kaiser rolls in an airtight container. They will be best within the first two days, but will last up to 5 days at room temperature. If refrigerated (in an airtight container), the rolls will last up to 5-7 days.I have found that if my kaiser rolls are not used within 1-2 days, that the best way to store them is to freeze them. Place into a freezer storage bag or wrap tightly in heavy duty aluminum foil. Kaiser rolls will freeze for up to a month.
