Instructions
Preheat your oven to 425°F (218°C) andscrub your beets clean with a vegetable brush under cold running water. Pat them dry and dice them into bite-sized pieces (no need to peel them).
Place 2 squares of foil on a baking sheet and divide the beets between them. Drizzle them with olive oil and season with salt. Then fold the edges of the foil up and over the beets, creating a pouch or packet.
Roast your beets in the oven for 45-60 minutes depending on how small or large you diced your beets.
Toss the beets with butter right before serving, if desired, and enjoy.
Notes
Washing your beets is essential! They are a root vegetable that holds on to a lot of dirt, and since you won't be peeling them you certainly don't want to eat it!
Beet juice will stain anything and everything it comes into contact with. This includes your hands, clothes, and cutting board. A thin layer of oil or non-stick cooking spray on your cutting board will prevent the wood from absorbing beet juice so you can simply rinse it off.
Cooked beets can be refrigerated in an airtight container for up to 5 days and easily reheated in the microwave.
