Instructions
To ensure your filet cooks evenly, let it come to room temperature on the counter for 30 minutes before cooking. Then, preheat your air fryer to 400°F (205°C)
Meanwhile, trim any connective tissue from the outside of your steak and pat it dry with paper towels. Season generously with salt and ground black pepper on all sides.
Place the seasoned filet mignon into your air fryer basket, making sure they are in a single layer with space between them (*see note). Air fry for 11-13 minutes for medium-rare, or until the steaks reach your desired internal temperature (*see note).
Remove steaks from air fryer and transfer them to a plate or cutting board. Then, top each filet with 1 portion of butter. Tent a piece of foil loosely over top and allow them to rest for 5 minutes before serving.
Notes
The filets can be wrapped with bacon if desired, use 1-2 strips per filet then secure in place using a toothpick. Remove toothpicks before serving.
For steaks that are about 1 ½-inches thick, the cooking times are as follows:
Rare: 10-12 minutes or 120°F (52°C)
Medium-rare: 11-13 minutes or 130°F (54°C)
Medium: 12-14 minutes or 140°F (160°C)
Medium-well: 13-15 minutes or 150°F (66°C)
Well: 14-16 minutes or 160°F (71°C)
Keep in mind that steaks will continue to cook another 5°F while resting, this is often referred to as 'carryover cooking'.
