Instructions
Preheat your oven to 375°F (190°C) and grease your 9x13 baking dish with 1 tablespoon olive oil.
In a large mixing bowl, combine the pre-cooked 3 cups white long grain rice with the 3 cups chicken, steamed 12 oz broccoli florets, 10.5 oz cream of chicken soup, ½ cup sour cream, 2 cups chicken broth or turkey stock, ½ cup milk, 1 ½ cups cheddar cheese, and seasoning (½ teaspoon garlic powder, each, salt & pepper). Transfer the mixture to your prepared baking dish.
Combine topping ingredients in a small bowl (⅔ cup Panko breadcrumbs, melted 3 tablespoon butter, chopped 2 tablespoon parsley) and mix until coated with the butter and crumbly in appearance. Sprinkle over the casserole.
Bake at 375°F (190°C) for 30-35 minutes, or until golden on top and bubbling around the edges. Remove from the oven and serve.
