Instructions
Preheat your oven to 425 degrees F (218 degrees C) and line a large rimmed baking sheet with aluminum foil for easy cleanup if desired.
In a large skillet or non-stick frying pan heat the olive oil to medium-high temperature. Once shimmering and just beginning to smoke, add the diced white onion and saute for 2-3 minutes. The onion should get fragrant, tender, and become transparent. Add 1 tablespoon of minced garlic and saute with the onion for 30 seconds to 1 minute.
Add the 1 pound of ground beef, break apart, and brown until almost completely browned or about 5-6 minutes. Add the taco seasoning and stir into the ground beef. Add the water as instructed on your packet (or use ¼ cup of water with my homemade taco seasoning mix). Combine the refried beans with the ground beef and taco seasoning. Cook until the beans are heated.
Spread the tortilla chips as your base, then top with 1 cup of nacho cheese sauce (heat in the microwave before pouring over the chips), beef and beans mixture, and 2 cups shredded Mexican cheese blend.
Bake at 425 degrees F (218 degrees C) for 15 minutes or until the cheese is completely melted and slightly browned.
Remove from the oven and add your favorite toppings then serve immediately.
