Instructions
In a large ziploc or plastic food storage bag, combine the marinade ingredients (soy sauce, brown sugar, olive oil, Dijon mustard, Worcestershire sauce, garlic, onion powder, and pepper) by squeezing the bag contents.
Place all of the pork chops into the bag of marinade and squeeze the excess air from the bag. Massage the bag of marinade to thoroughly coat the pork chops. Refrigerate for at least one hour. *A quick 15 minute marinade time can work, but the pork does not get fully flavored in this short time.
Remove the marinated pork chops from the refrigerator and allow them to warm to room temperature for about 30 minutes. Use the olive oil to brush onto your grill once heated.
Transfer the marinated pork chops to your oiled and heated grill, discard the remaining marinade. Cook the pork chops over medium heat for 4-5 minutes per side, or until the meat reaches your desired level of doneness. *145 degrees F (63 degrees C) for medium rare, and 160 degrees F (71 degrees C) for medium, as read by a digital meat thermometer.
Remove from the grill when the pork chops have reached your level of doneness, then allow the pork chops to rest for 3-4 minutes before serving.
