Instructions
Bring a large frying pan, skillet, or griddle with the 1 tablespoon olive oil to high heat. The oil should begin to shimmer, and should be just starting to smoke.
Season the steak tips with ½ tablespoon steak seasoning, then add the cubed 1 ½ lb sirloin steak tips along with herbs for aromatics (like 1 sprig rosemary). Cook for about 4 minutes, or until all sides are browned. If you are using a small pan, cook the meat in batches to prevent overcrowding the meat.
Just before serving, add the 1 tablespoon butter and baste the melted butter over the cooked steak tips for about 30 seconds. Serve immediately. Garnish with chopped parsley, if desired.
Notes
Letting your steak come to room temperature before cooking will reduce cooking time and give you a better sear!
Cast iron skillets are perfect for evenly distributing heat, resulting in a beautiful caramelization on your browned steak bites.
Whichever pan style you use, leave enough room to not overcrowd the steak bites. Cook in batches, if needed.
Ribeye steaks and tenderloin make divinely delicious steak bites, but they are a more expensive cut. For an even cheaper option use a chuck roast and cut it into steaks or bites (and finish them with ghee for the most amazingly tender bites from a less premium beef cut)!
