This grilled yellow squash is a quick and simple way to make a delicious and nutritious vegetable side dish! It is seasoned with a simple combination of garlic salt and pepper to really let the natural flavors shine! This squash is fork-tender and will go perfect with any of your favorite BBQ dishes!

To get started, preheat your cleaned and oiled grill to medium heat (between 350°F/175°C to 375°F/190°C).
Meanwhile, prepare your squash by cutting horizontally into ¼ to ½ inch thick strips.
4 small yellow squash
Brush your squash strips with olive oil and season them with garlic salt and pepper.
½ tablespoon olive oil, ½ teaspoon garlic salt, ¼ teaspoon pepper
Grill the yellow squash pieces for 5-10 minutes on each side, depending on your desired level of doneness.
Once you are satisfied with the tenderness of your squash, remove them from the grill and serve immediately.
Notes
When selecting either straight-neck or crookneck squash, opt for squash that is smaller and was harvested while young (for more flavor). Large squash grills exceptionally well but is not as flavorful.
You can brush olive oil onto your yellow squash before seasoning, however, I prefer to clean and oil my grill, rather than add oil to my veggies!
Make sure you have long, thick strips of squash that won't fall through the grates of your grill, but are not too thick that they will take a long time to cook.
Rotate or turn your squash occasionally to prevent them from burning or sticking to the grill.
Rather than using oil and seasoning, you can mix the seasoning in a tablespoon or two of melted butter and brush it onto your grilled squash before serving. Yum!
This recipe would also work for other squash varieties such as zucchini (including black, grey, striped, and yellow zucchini), pattypans, sunburst, zephyr, or any of your favorite summer squash.
