Instructions
Preheat your oven to 400°F (205°C). Spread the sliced bell peppers, onion, and chicken on a large baking sheet. Sprinkle seasoning over chicken, peppers, and onion: chili powder, cumin, paprika, garlic, oregano, cilantro, and chopped chipotle pepper.
Zest the lime over your ingredients, then drizzle with olive oil. Toss all of the ingredients to coat with seasoning and olive oil, then squeeze the lime juice over the fajita mix. (optional) Toss your ingredients again, then spread evenly on your baking sheet.
Place your baking sheet of fajita mix into the oven and cook for 20 minutes. Remove from the oven, move your fajita mix to one side and place your desired number of tortillas in the remaining third of your baking sheet.
Return to the oven and cook everything for an additional 5 minutes. Serve immediately.
Notes
If you love fajitas, go ahead and make a big batch of some tasty fajita seasoning! Omit the other seasonings in the recipe and use 1 tablespoon of fajita seasoning per 1 pound of meat.
If you have a little extra time on hand, you can marinate your chicken in a tasty fajita marinade.
Make sure your veggies and chicken are cut into strips that are approximately the same size so that they will cook at the same rate.
