Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet(s) with parchment paper or a Silpat baking mat.
Using an electric mixer, cream together ¾ cup butter(or a blend of butter and shortening) with 1 cup sugar until the mixture is fluffy and light. Then beat in 1 large egg, 2 teaspoon vanilla extract, ½ teaspoon baking soda, and ¼ teaspoon salt.
Add 2 cups all-purpose flour in small increments and mix until you have a smooth dough. Gently fold in 1 cup Trolli Sour Brite Crawlers candies until evenly distributed.
Use a tablespoon or cookie scoop to scoop out the cookie dough and roll it into a ball. Place the balls onto the baking sheet and slightly flatten them with your hands, leaving some space in between the cookies.
Bake at 350°F (175°C) for 10-14 minutes, or until the bottoms of the cookies have only just begun to turn golden in color. Remove them from the oven and let them cool on the baking sheet for 5 minutes before moving the cookies to a wire cooling rack to finish cooling.
Notes
I used two 5.5-ounce bags of Trolli Sour Brite Crawlers minis and had just enough candies to make these cookies.
I recommend using kitchen shears for chopping up your Trolli Sour Brite Crawlers minis. Let the cut side fall into a small dish of granulated sugar so that the pieces don't stick together. Do this before folding the candy into the dough.
I've experimented with baking these cookies as rounded balls, drop cookies, and (my preferred way) rounded balls that have been slightly flattened.
The Trolli Sour Brite Crawlers cookies will continue to bake as they sit on the cookie sheet, so you'll want to give them about 5 minutes to firm up before transferring them.
To make in advance: Prepare the dough as directed and press it into a ball. Wrap it tightly in plastic wrap and store it in the fridge for a few hours (or even overnight). For best results, bake within 24 hours.
To store: Keep any leftover cookies stored at room temperature in a sealed container for up to 1 week.
To freeze: Wrap your Trolli Sour Brite Crawlers cookies in plastic wrap, then store them in a sealed container or freezer-safe bag to freeze for up to 3 months.
