Bake The Apple Pie Monkey Bread
Preheat your oven to 350°F (175°C) and liberally grease and flour your bundt or tube pan (or use non-stick baking spray).
Empty the apple pie filling into a large mixing bowl. Cut the apple slices into smaller pieces using a knife or knives to cut the apples into chunks.
Add the sugar and light brown sugar, spices (ground cinnamon, ground nutmeg, and salt), and melted butter to the apples. Mix to combine.
Cut the biscuits into quarters (or smaller) and add the biscuit pieces into the large mixing bowl with the apple pie filling. Fold into the mixture to coat evenly with the apple pieces.
Transfer the biscuit and apple mixture into your prepared pan, then bake for 45-50 minutes. To check that the bread is done, note that it should be fluffy, and an inserted toothpick, knife, or cake tester should come out clean. Additionally, a digital thermometer should read 190°F (88°C) when inserted into the center of the bread.
Remove from the oven when done and invert over a plate or serving tray right away to remove the monkey bread.
Make The Vanilla Icing, Drizzle & Serve
Combine icing ingredients (confectioners' powdered sugar, heavy cream, vanilla extract) in a small bowl. Start with less cream and add more as needed to reach your desired drizzle consistency. Mix until smooth.
Spread the icing on your monkey bread, using a spoon to drizzle the glaze or pour slowly over the top. Serve immediately while warm.
Notes
The cinnamon and nutmeg can be swapped for apple pie spice. Use ¾ teaspoon of apple pie spice in the monkey bread.
To store: You can keep your apple pie monkey bread in an airtight container at room temperature for up to 4 days. It tastes the best on days 1 & 2.
To freeze: Wrap your apple pie monkey bread in foil, then place it in a Ziploc freezer bag. You can freeze it for up to 2 months and just set it out on the counter to thaw whenever you want it.
To reheat: Apple Pie monkey bread is best served warm, so leftovers can be reheated in small increments in the microwave. (Extra icing for dipping is great in this situation, as the icing will likely melt during heating!)
