Instructions
In a medium-sized bowl, stir together the sliced strawberries and ½ cup of sugar. Set aside.
Preheat the oven to 425°F (215°C) and line a baking sheet with parchment paper.
In a large bowl, stir together your Bisquick baking mix, milk, melted butter, and sugar until a soft dough has formed.
Drop the dough by rounded tablespoons onto the prepared baking sheet. Bake in the oven at 425°F (215°C) for 10-12 minutes, or until golden brown.
Remove the baking sheet from the oven and allow the biscuits to cool for a few minutes.
Split the shortcakes in half and add a layer of whipped cream followed by a layer of sliced strawberries. Place the top half of the shortcake on top and top it with strawberries and more whipped topping. Serve immediately.
Notes
Sprinkle the dough with sugar before baking to add a nice and sweet sparkly topping!
These biscuits are drop biscuits, so the size and shape will vary. If you want the biscuits to be more uniform in shape, you can roll out the dough and use a round cookie cutter to cut out the biscuits.
If you want to make some homemade whipped cream instead of using store-bought, check out my recipe for stabilized whipped cream!
The biscuits will be tender when they first come out of the oven and could fall apart if you try to halve them while they are still hot. Letting them cool off for a few minutes (or even completely) will make them much easier to slice!
Alternatively, you can serve your Bisquick strawberry shortcake by breaking up a biscuit into a bowl, covering it with strawberries, and then adding a dollop of whipped topping on top.

To store: You'll want to enjoy this tasty treat immediately after preparing it. However, the biscuits can be made ahead of time and stored for later. Just keep them in an airtight container for a few days. Due to the moisture in the strawberries, they shouldn't sit for more than a few hours.
