This Caprese flatbread is incredibly tasty and only takes a few minutes to prepare, making it a fantastic appetizer or lunch option! You can make it using homemade flatbreads, pesto, and balsamic glaze, or opt for store-bought versions to save some time! Either way, this delicious pizza is sure to be a hit every time you serve it!

Instructions
Preheat your oven to 500°F (260°C) and line a baking sheet with parchment paper.
Place both of the 2 flatbreads onto the prepared baking sheet and brush them with 2 tablespoon olive oil, making sure to cover the entire surface all the way out to the edges.
Spread ½ cup pesto over the top of the flatbreads in an even layer. Then, place the 8 oz fresh mozzarella slices over the top followed by the halved 1 cup grape tomatoes.
Bake in the preheated oven at 500°F (260°C) for 10-15 minutes or until the cheese is melted and the edges have browned. If desired, you can broil the pizza for 1-2 minutes to brown the cheese.
Remove the flatbreads from the oven and drizzle them with ¼ cup balsamic glaze, garnish with sliced 1 handful fresh basil, and the optional grated ¼ cup Parmesan cheese. Serve immediately.

My homemade flatbread comes together in a snap and is ultra tasty! However, you can also make this yummy pizza using store-bought flatbreads. You could even make it using pizza dough!
You can use either a balsamic reduction or a balsamic glaze. They are very similar, and both are super easy to make! A balsamic reduction is just reduced balsamic vinegar while the glaze has an added sweetener.
I used halved grape tomatoes for my caprese flatbread, but feel free to use your favorite tomato variety! Small heirloom tomatoes would be a great choice as well!
To store: This flatbread is really best enjoyed fresh. However, you can keep your leftovers stored in an airtight container in the fridge for a few days if needed.
To reheat: Reheat your pizza on a baking sheet in the oven until it is heated to your liking.
