Aebleskivers (or ebelskivers) are a traditional Danish stuffed pancake ball that is fried until golden on the outside and tender inside! They require a special pan to make but are so incredibly easy to prepare once you have one (and are definitely worth it!) Fill them with jam, fruit, peanut butter, or anything else you may like for a fun and indulgent breakfast treat!

Instructions
Using a stand mixer or hand mixer, beat the egg whites on high speed until stiff peaks form. Set aside.
In a separate, large mixing bowl, mix together the flour, sugar, baking powder, baking soda, and salt until well combined. Add in the buttermilk, egg yolks, and melted butter, and stir only until everything is incorporated.
Gently fold the beaten egg whites into the aebleskiver batter using a silicone spatula. *The batter will be thick.
Place your aebleskiver pan over medium heat. Once hot, brush each cup with some melted butter and then pour about 2 tablespoons of batter into each cup. *If you want to fill your pancakes, add 1 tablespoon of batter to the pan, followed by a small scoop of jam or filling, and then the second tablespoon of batter.
When the aebleskivers begin to bubble around the edges, you'll want to flip them halfway, allowing the batter to pour into the bottom of the cup. Then, turn them the rest of the way to finish the sphere and let them cook until they are golden brown. *Traditional Danish cooks use a knitting needle to flip the pancakes, but you can use a fork, chopstick, or wooden skewer.
Transfer the cooked aebleskivers to a serving platter and dust with powdered sugar. Serve immediately with jam, honey, or syrup.
Notes
These ebelskivers are tasty as-is, or you can stuff them with some yummy fillings! Try out some jam, Nutella, berries, cookie butter, lemon curd, or blueberry compote!
Additionally, you can fill your ebelskivers after they have been cooked using a pastry bag (similar to filling a donut).
Fill your aebleskiver pan going in a clockwise motion. Once all of the cups are filled, continue following the clockwise motion to flip them. This will help ensure that they are all cooked evenly and none of them will burn.
To store: Aebleskivers are best when enjoyed fresh so I do not recommend refrigerating them. However, they can be frozen for later.
To freeze: Allow your pancakes to cool completely and place them into a freezer bag to store in the freezer.
To reheat: Place the still-frozen ebelskivers onto a baking sheet and warm them in the oven at 325ºF (160ºC).
