Instructions
Prepare your jalapenos. Wash, slice in half lengthwise, then remove the seeds and ribs. *For presentation, I like to slice the jalapenos so that the stem is also cut in half.
Add the softened cream cheese, shredded cheddar cheese, lemon juice, onion powder, salt, and pepper to a medium-sized mixing bowl. I usually start mashing my cream cheese, and lemon juice, then add the remaining ingredients and mix until evenly distributed.
Fill the halved jalapenos with the cream cheese mixture just to the edges or slightly over. *The filling will overflow during cooking if there's too much in your peppers.
Cut your bacon slices into two thin strips by slicing down the length of each slice. Wrap each stuffed pepper with one bacon strip, securing it with toothpicks.
Place your bacon-wrapped jalapenos into the air fryer basket with plenty of spacing, then cook at 360°F (182°C) for 12-13 minutes. The bacon should be crispy and browned when done.
Remove from your air fryer and serve immediately.
Notes
Pick smaller jalapenos, so they are easy to wrap with the bacon.
Use a toothpick at both ends of the jalapeno to hold the bacon in place.
Work in batches as needed to air fry your poppers.
Set your oven to warm and place the cooked poppers on a parchment paper-lined baking sheet to keep toasty while you finish air frying your poppers.
Air fryers get hotter as you use them, so the later batches may cook faster.
To store: Place the fully cooled air fryer poppers into a shallow airtight storage container in a single layer. Seal and keep refrigerated for up to 3 days.
To freeze: Flash freeze your fully cooled or unbaked poppers in a single layer on a baking sheet. Once frozen, transfer to a freezer storage bag or airtight storage container, label with the date, and keep in the freezer for up to 1-2 months. Thaw in the refrigerator overnight before reheating.
To reheat: Warm refrigerated leftovers in the oven or air fryer at 375°F (190°C) until heated.
