Instructions
Wash your sweet potato and pat it dry. Then, peel it and dice it into cubes that are about ½-1 inch in size.
Add the extra virgin olive oil to a large skillet or frying pan and place it over medium-high heat.
Add the sweet potato to the hot pan and cook for 10 minutes, stirring occasionally until fork-tender and browned.
Season the potatoes with salt, pepper, and garlic powder (or ground cinnamon for the sweeter version), and then stir well to combine. Cook for 1 more minute, remove the skillet from the heat, and serve immediately.
Notes
If you want to cook multiple sweet potatoes, use an extra skillet for cooking in batches or a large electric griddle to avoid overcrowding the skillet.
Ensure your sweet potatoes are cut into roughly the same size chunks so they cook at the same rate.
A drizzle of honey or maple syrup before serving is a sweet treat if you have opted to add cinnamon rather than the savory garlic powder.
To store: Any leftover sauteed sweet potatoes can be stored in a sealed container in the fridge for 5 days.
To reheat: Reheat your sauteed sweet potatoes in a skillet over medium heat with a little olive oil until heated to your liking.
