Baked cauliflower with cheese is a delicious and flavorful vegetable dish that is perfect to serve as a side for any weeknight family dinner! 1cupcheddar cheese(shredded, sharp cheddar is best, or use Colby)
½cupmozzarella cheese(shredded, or use Swiss cheese or Monterey Jack)

Instructions
Preheat your oven to 425°F (218°C) and lightly grease a 9x13 baking dish with olive oil or non-stick cooking spray.
Wash the cauliflower heads and pull or chop them into florets. Place the cauliflower in a large mixing bowl and add the extra virgin olive oil and seasoning (garlic powder, dried parsley, salt, and ground black pepper).
Toss the cauliflower with oil and seasoning until the florets are evenly coated, then transfer into your prepared baking dish. Arrange the florets so that they make an even layer.
Bake at 425°F (218°C) for 20 minutes, then remove the dish and stir the cauliflower florets to turn them for even cooking. Top the partially cooked cauliflower with the cheese and return to the oven.
Continue cooking for 15-20 minutes more or until the cauliflower reaches your desired level of tenderness. Remove from the oven when done, and serve immediately.
Notes
The average medium-sized head of cauliflower is approximately 4-6 pounds and yields about 3-4 cups of florets.
For a nice golden brown cheesy layer, broil on high for the last 2-3 minutes of cooking time.
Let the cauliflower cool for a few minutes before serving to prevent the cheese from sliding off, if desired.
To store: Place your leftover baked cauliflower in an airtight container and store it in the fridge for up to 2-3 days.
To freeze: Allow your baked cauliflower to completely cool then place it in a freezer-safe container. Store in your freezer for up to 2-3 months. Thaw in the fridge overnight and follow the reheating instructions.
To reheat: Preheat your oven to 350°F (175°C). Place your leftovers in a baking dish and reheat in the oven for 5-10 minutes (if not frozen), 20-30 minutes (frozen), or heated through to your liking.
