Instructions
Measure out all of the porketta seasoning ingredients.
Add everything to a small mixing bowl and stir to combine.
Use your homemade porketta seasoning right away or store it in an airtight jar to be used later.
Notes
This recipe yields 3.83 tablespoons of porketta roast seasoning.
Use one full batch to season a roast 4-5 pounds in weight. Start with only half if you're usually shy about aggressively seasoning your roasts or unfamiliar with the flavor of fennel seed.
If you don't like the texture of whole fennel seeds, you can use a spice grinder to grind them up before making your porketta seasoning.
To store: Keep your porketta seasoning in an airtight container or spice jar somewhere cool and dark (like a pantry or cabinet). It is best used within 6 months but will last for much longer.
