Instructions
Add your extra virgin olive oil to a cast iron skillet (or a similar heavy-bottomed skillet) and put it over medium-high heat.
Season all sides of the pork loin with salt and pepper and then place it into the hot skillet. Sear both sides for 2-3 minutes each, or until golden brown.
Place the cubed potatoes, sliced onion, carrots, and celery along with the minced garlic into your slow cooker. Set the seared pork loin on top of the veggies and season with pork roast seasoning.
Place the lid on the slow cooker and cook on low heat for 6 hours or high heat for 2-3 hours.
Slice the pork and serve with a side of cooked vegetables.
Notes
My pork roast seasoning is loaded with flavor and easy to whip up! Of course, you can also use your favorite mix.
Cook time will vary based on the weight of your pork loin.
Don't toss out the drippings! Instead, you can make a delectable pork gravy to pour over top of the meat!
To store: Keep any leftovers stored in an airtight container in the refrigerator for up to 4 days.
To freeze: This pork loin can be frozen for up to 6 months. Just place it into an airtight, freezer-safe container.
To reheat: You can reheat your pork loin in either the microwave or oven. Place the pork into a baking dish and cover it tightly with foil. Then, bake in the oven at 350°F (175°C) until the internal temperature reaches 165°F (74°C). Remove from the oven and let the meat rest for 10 minutes.
