This chicken burrito bowl is a delicious Tex-Mex meal that can be enjoyed for lunch, dinner, or any day of the week! It's packed with perfectly seasoned chicken, cilantro lime rice, diced avocado, fresh mango salsa, corn, black beans, and cheese! Instructions
Add the strips of chicken to a mixing bowl with 1 tablespoon of olive oil and toss to coat. Then, season them generously with taco or fajita seasoning and toss once more until the meat is well coated.
Add 1 tablespoon of olive oil to a large skillet over medium-high heat. Once hot, add the strips of chicken and cook until no pink remains, flipping strips as needed. Set aside.
Divide the cilantro lime rice evenly into 4 separate bowls. Top each bowl with an equal portion of black beans, corn, Mexican cheese, mango salsa, diced avocado, and sour cream.
Garnish each bowl with freshly chopped parsley and serve immediately.
Notes
Burrito bowls are easily customizable! Try adding your favorite burrito mix-ins like queso fresco, shredded iceberg lettuce, salsa roja, salsa verde, sauteed onions, pico de Gallo, or your favorite hot sauce!
I like to use fresh mango salsa in my burrito bowls, but you can use any variety of salsa, or try my fresh pineapple salsa!
To store: To keep everything fresh, I recommend storing each of the individual components of your burrito bowl in the fridge separately. When you're ready, assemble your burrito bowl and enjoy!
