Instructions
Drizzle one tablespoon of extra virgin olive oil over your strips of skirt steak and generously season with taco seasoning (or fajita seasoning). Toss until all of the meat is well coated.
Heat 1 tablespoon of extra virgin olive oil over medium-high heat in a large skillet. When hot, add the steak to the skillet and cook, stirring as needed, until browned and cooked to your liking.
Divide the cilantro lime rice into 4 bowls and then top each bowl with corn, black beans, mango salsa, Mexican cheese, diced avocado, and sour cream.
Garnish with chopped cilantro and serve immediately.
Notes
Feel free to customize this burrito bowl with all of your favorite combinations! Try some shredded cheese, queso fresco, avocado, shredded lettuce, guacamole, salsa verde, salsa roja, sauteed onions, diced tomatoes, pico de Gallo, and more!
I used mango salsa in my bowl, but it would be equally tasty with your favorite type of salsa!
To store: I would recommend storing the individual components in your burrito bowl separately. Then, when ready, you can just add it all to the same bowl and enjoy!
