Ingredients 2 lbs russet potatoes (or other potatoes) 2 tablespoon olive oil (extra virgin) water (enough to cover the potatoes) salt & pepper (to taste + 1 teaspoon salt for boiling potatoes)

Add enough water to cover potatoes.

Bring to a boil.

Simmer.

Drain.

Add olive oil.

Blend with a hand mixer.

Transfer to serving dish and enjoy!
