Easy Oven Baked Corned Beef Dinner
Corned Beef Seasoning
bay leaves, peppercorns, mustard seeds, coriander seeds, allspice berries, cloves, salt, fennel seeds, dill seed, star anise, ground ginger, cardamom pods, and cinnamon stick.
you'll also need beef broth, Guinness beer, coarse ground mustard, brown sugar, garlic, thyme, salt, and pepper.
Broth, Guinness & More
Combine
all of the broth and corned beef seasoning ingredients. Then coat the corned beef with coarse ground mustard and crumble light brown sugar over the beef.
Cover & Cook
the corned beef before adding the vegetables. Strain the broth to remove spices (or use sachet) and return the broth and beef to your baking dish.
Add Veggies
layer in the chopped vegetables including carrots, potatoes, parsnips, celery, and cabbage.
Cover & Return To Oven
cook for an additional 1 hour per pound of corned beef, and until the vegetables are tender. Slice against the grain when serving.
