🥘 Ingredients

Readily available ingredients at almost any grocery store! It's likely that you already have everything on hand!

  • Red Potatoes - Any potato will work, baby reds, russets, Yukon gold, etc.
  • Bacon - A good streaky bacon, I like a smoked bacon.
  • Onion - Yellow onions are the best for this recipe, white will work, but red onions are a no go in my book.
  • Garlic - Mince it very fine, they will roast and add a nice flavor.
  • Seasoning - You can vary the recipe quite a bit here, try my Cajun seasoning for a nice kick!
  • Optional Vegetable Add-Ons - Veggies like asparagus, mushrooms, or zucchini.

🔪 Instructions

It doesn't take long to gather and prep your ingredients, then pile them into your aluminum foil squares!

  1. Preheat. Heat oven to 375°F (190°C) - you can set the temp higher for faster cook times but the flavors blend nicely with a longer cook time.
  2. Prep and portion. Pull off big squares of aluminum foil. Portion out sliced potatoes, bacon and onion for each packet.
  3. Add seasoning. Season with garlic powder, salt & pepper.
  4. Don't skip the butter. Top each packet of ingredients with a generous pat of butter. Alternately, you can toss your contents with your favorite cooking oil before transferring into the aluminum foil squares.
  5. Bake. Seal packets and bake seam side up in preheated oven at 375°F (190°C) for one hour or until potatoes are fork tender.

Serve these tender and tasty baked potatoes with any of your favorite steaks, like our pan-seared ribeye or New York strip!

💭 Angela's Pro Tips & Recipe Notes

  • Make sure the foil packages are sealed tightly and the seam side is facing up.
  • No need to spray or coat the foil in oil unless you are opting to remove the bacon and butter.
  • These potato foil packs are versatile try adding veggies!
  • Be careful of the steam that vents when opening your foil packets!

🥡 Storing & Reheating

You can refrigerate any leftovers in the foil packs for up to 3 days. Or separate the foil and potatoes and freeze in a zip-lock type bag for up to 1 month.

Reheating is a breeze just pop the packet in the oven till warm, or remove the foil and place it on a microwavable plate and zap it for a minute or two!

Ingredients
 

  • 3 or 4 medium potatoes (sliced - we used red potatoes, but use your favorite!)
  • 4 strips bacon (sliced)
  • ½ small onion (small, or use 1 shallot - chopped or diced)
  • 4 tablespoon butter (1 pat of butter per packet, approx 1 tablespoon each)
  • each, salt & pepper (to taste)
  • garlic powder (optional, to taste)

(Note: 2x or 3x only changes the ingredient list)
