Baked BBQ Chicken Leg Quarters Recipe {with homemade honey bourbon chipotle barbecue sauce}
These flavorful chicken quarters are a super easy way to enjoy some wonderful barbecue chicken any time of the year, no matter the season! With winters around here in Minnesota, you can bet that I bake my bbq chicken for several months out of the year!
This sauce is also very easily adjustable to the right amount of 'heat' for your personal (or family) preferences!
How To Make Oven Baked BBQ Chicken Leg Quarters
Make the Honey Bourbon Chipotle Barbecue Sauce
- In a medium saucepan, melt the butter at medium heat.
- While the butter is melting, blitz your onion and garlic in a food processor until very finely chopped (or to your desired consistency).
- Add the chopped onion and garlic to the melted butter and cook for 1-2 minutes, to a lightly golden caramel color.
- Add the ketchup, bourbon, apple cider vinegar, light brown sugar, honey, chipotle powder (if using chipotle chile in adobo, blitz the chipotle chile as well and add adobo sauce for more heat if desired), and cayenne powder, then stir to combine.
- Taste, and add more chipotle if you would like more 'heat' in your barbecue sauce.
- Reduce heat and simmer on low for 20 minutes, or until thickened to your desired consistency.
Bake the Chicken Quarters
- Start with preheating your oven to 350ºF ( 175ºC ).
- Brush the honey bourbon chipotle bbq sauce ( or your favorite barbecue sauce ) onto your chicken leg quarters and arrange them, skin side up, on a parchment paper lined baking sheet or in a baking dish. Reserve some of the barbecue sauce for brushing onto the cooked chicken before serving, if desired.
- Oven bake the coated chicken leg quarters for 45 minutes (up to an hour, depending on the size of your chicken pieces) at 350ºF ( 175ºC ).
- Remove from the oven when done with a minimum internal temperature of 165ºF ( 74ºC ).
- Brush more of the honey bourbon chipotle sauce onto the cooked chicken, or serve on the side (optional). These can be served immediately, however, I like to let mine rest for 5-10 minutes before serving.

It should be included but it is assumed that you would season with salt and pepper. The bbq sauce provides the flavor in this case. Thanks for asking!

Great,loved it! I spayed the backing dish with cooking spray for easy clean up. Just thought it would be better onn a rack with a 9×13 pan my chicken breast where not that lean.
