Aebleskivers (or ebelskivers) are a traditional Danish stuffed pancake ball that is fried until golden on the outside and tender inside! They require a special pan to make but are so incredibly easy to prepare once you have one (and are definitely worth it!) Fill them with jam, fruit, peanut butter, or anything else you may like for a fun and indulgent breakfast treat!
Best Ebelskiver Pancake Recipe
These aebleskivers are a wonderfully tasty breakfast option that you need to try out! They are like a cross between light and fluffy pancakes and jelly-filled donuts (amazing, right?)!
These spherical pancakes can be stuffed with so many things, from peanut butter or Nutella to fruit slices or jelly! Of course, they are also super tasty without any filling at all!

🥘 Aebleskiver Ingredients
Ebelskivers use basic baking ingredients, plus some buttermilk. You'll only need 2 eggs for this recipe, but the egg whites and yolks need to be separated first.
- Egg Whites - 2 large egg whites. *The yolks will also be used separately.
- Flour - 2 cups of all-purpose flour, spooned and leveled.
- Sugar - 1 tablespoon of granulated sugar.
- Baking Powder - 2 teaspoons of baking powder.
- Baking Soda - ½ teaspoon of baking soda.
- Salt - ½ teaspoon of salt.
- Buttermilk - 2 cups of buttermilk (see all my ways to make buttermilk here).
- Egg Yolks - 2 large egg yolks.
- Butter - 4 tablespoons of melted butter, plus more for your pan.
- Jam (optional) - ½ cup of jam or your preferred filling, if desired. You can also leave out the filling altogether!

🍴 Equipment Needed To Make Aebleskiver
Aebleskiver is a special type of pancake that uses a special pan (similar to how waffles need to be made in a waffle iron). An aebleskiver pan is a nonstick pan (typically cast iron) that has 7 rounded cavities. The batter is poured into these cavities and then rotated while cooking in order to make a ball.
In addition to this pan, you will need an electric mixer, a mixing bowl, a whisk, a silicone spatula, and something to rotate the ebelskiver with (such as a knitting needle, fork, or chopstick).
🔪 How To Make Aebleskiver
These Danish pancakes are super quick and easy to make! You can leave them plain or add a tasty filling; they are yummy and simple to prepare!
This recipe is for 8 servings of aebelskivers. Your pancake pans will thank you for doubling the recipe. 🙂
Prepare The Batter
- Beat the egg whites. Using a stand mixer or hand mixer, beat 2 large egg whites on high speed until stiff peaks form. Set aside.
- Mix the batter. In a separate, large mixing bowl, mix 2 cups of flour, 1 tablespoon of sugar, 2 teaspoons of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt until well combined. Add 2 cups of buttermilk, 2 large egg yolks, and 4 tablespoons of melted butter, and stir until everything is incorporated.
- Fold. Gently fold the beaten egg whites into the aebleskiver batter using a silicone spatula. *The batter will be thick.
Cook The Aebleskiver Pancakes
- Preheat the pan. Place your aebleskiver pan over medium heat. Once hot, brush each cup with some melted butter and then pour about 2 tablespoons of batter into each cup. *If you want to fill your pancakes, add 1 tablespoon of batter to the pan, followed by a small scoop of jam or filling, and then the second tablespoon of batter.
- Cook. When the aebleskivers begin to bubble around the edges, you'll want to flip them halfway, allowing the batter to pour into the bottom of the cup. Then, turn them the rest of the way to finish the sphere and let them cook until they are golden brown. *Traditional Danish cooks use a knitting needle to flip the pancakes, but you can use a fork, chopstick, or wooden skewer.
- Serve. Transfer the cooked aebleskivers to a serving platter and dust with powdered sugar. Serve immediately with jam, honey, or syrup.
Serve your ebelskivers with extra jam, powdered sugar, syrup, roasted berries, toffee sauce, or whipped cream! They taste great with anything sweet you may have on hand! Enjoy!
💭 Tips & Notes
- These ebelskivers are tasty as-is, or you can stuff them with some yummy fillings! Try out some jam, Nutella, berries, cookie butter, lemon curd, or blueberry compote!
- Additionally, you can fill your ebelskivers after they have been cooked using a pastry bag (similar to filling a donut).
- Fill your aebleskiver pan going in a clockwise motion. Once all of the cups are filled, continue following the clockwise motion to flip them. This will help ensure they are all cooked evenly and none will burn.
🥡 Storing & Reheating
Aebleskivers are best when enjoyed fresh, so I do not recommend refrigerating them. However, they can be frozen for later (and are super freezer-friendly!)
Freezing Aebleskiver
Allow your pancakes to cool completely, and place them into a freezer bag to store in the freezer.
Reheating Aebleskiver
Warm the still-frozen ebelskivers on a baking sheet in the oven at 325ºF (160ºC) until heated to your liking.

❓ Recipe FAQs
Aebleskiver or ebelskiver (called Æbleskiver in Danish) translates to "apple slices." Originally the recipe featured placing apple slices into the pancakes as a filling, although this is not common practice today.
At a glance, these two dishes can look pretty similar. However, they do have some noticeable differences. Poffertjes are Dutch pancakes that use yeast as the leavening agent while ebelskivers use buttermilk and baking powder.
Believe it or not, there is premade ebelskiver pancake mix that you can use if you don't want to make your batter from scratch. However, I don't recommend using a standard pancake mix, as it won't be fluffy enough to fill the spheres.
